PEPPERY CHICKEN 
8 skinned chicken breasts
2 tbsp. olive oil
2 tbsp. soy sauce
2 tbsp. honey
1/2 tsp. thyme
1/2 tsp. paprika
1 tbsp. white vinegar
1/4 tsp. allspice
1 tsp. ground pepper
2 c. mushrooms

Preheat oven to 375 degrees. Place chicken in a shallow pan. Combine olive oil, soy sauce, honey, thyme, paprika, vinegar, allspice, and pepper and pour over chicken. Marinate in refrigerator for at least an hour. Bake chicken for 30 to 40 minutes or until cooked through. Surround chicken with sliced mushrooms and bake 5 minutes more.

FOR GRILLING: Remove breasts from marinade and grill until cooked through, basting periodically with marinade. Add mushrooms to the marinade and simmer for 5 minutes. Spoon over grilled chicken breasts. Serves 8. 180 calories preserving, 12 saturated fat calories.
