HAMBURGER QUICHE | |
1/2 lb. lean ground beef 1 tbsp. water 1/2 c. plain low-fat yogurt 1/2 c. skim milk 2 eggs 1 tbsp. cornstarch 1/4 c. (2 oz.) sharp Cheddar cheese, shredded 1 tbsp. Vidalia onion, chopped 1/4 tsp. salt 1/4 tsp. paprika 1/2 tsp. Italian seasoning 1 (9-inch) deep-dish pie crust Preheat oven to 350°F. In a microwave-safe dish, brown meat with water*, stirring occasionally. Drain and set aside. In a large bowl, whisk together yogurt, milk, eggs and cornstarch until smooth. Stir in drained meat, cheese, onion, salt, paprika and Italian seasoning. Pour into pie crust and bake for 35 to 40 minutes or until center of the pie is set. Yield: 8 servings. *Cover dish with plastic wrap to prevent splatters. |
