MADCAP MEAT LOAF 
2 lbs. ground beef
1 1/2 c. soft bread crumbs
2 eggs
2 tsp. salt
1/2 c. green pepper, minced
2 (8 oz.) cans tomato sauce with onions
6 slices American cheese
2 c. cooked mixed vegetables
1/2 tsp. crushed thyme

Mix first 5 ingredients with 1 can tomato sauce. In a 12 x 8 x 2 inch baking dish, shape mixture into loaf with an indentation. Top with cheese. Toss vegetables with thyme; spoon over cheese. Pour on rest of tomato sauce. Bake for 20 minutes at 350 degrees.
