CHICKEN ALA KING
1 (10 oz.) pkg. frozen peas
1/4 c. butter
1/4 c. minced onions
1/4 c. all purpose flour
1 c. chicken broth
1 c. milk or light cream
2 c. cooked diced chicken or turkey
1 (4 oz.) can sliced mushrooms, drained
1 (2 oz.) jar pimento, drained and chopped
1 tsp. salt
1/4 tsp. black pepper

Cook peas, drain and set aside. Place butter and onion in a 3 quart glass casserole dish. Cover and microwave 2-3 minutes or until tender. Stir in flour until smooth. Gradually stir in chicken broth and milk. Microwave 4-6 minutes, stirring every 2 minutes. Add peas and remaining ingredients. Cover and microwave 5-7 minutes or until bubbly. Stir once during cooking. Let stand 5 minutes before serving. Serve over rice, noodles, or in patty shells.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Excellent recipe. I sautéed fresh mushrooms. Added sherry to it. Although any other wine would work. It boosts the flavor and makes it a little more special. I take puff pastry fold into muffin tin. Serve over top. Makes for a nice evening with friends without spending a ton of time in Kentucky then. A few broccoli spears on the side and your good to go.

Recipe is great. I use turkey legs. I put them in crockpot until done, remove meat, (careful to remove bones & tendons) shred the meat - and follow rest of recipe. Can freeze.

Excellent!!! May need a little more roux to thicken at end. Can easily be made on stove top. Serve it over flaky biscuits! Used half cream/milk and Land-0-lakes butter-canola spread to cut some fat.

This is a quick, delicious, nourishing dinner. We use to eat it over TOAST points when I was a kid - many, many years ago! Love it with cranberry sauce.

This recipe is awesome! I omitted the mushrooms and pimento because I don't care for them. I don't think it affected the flavor at all. My hubby said it's way better than the Stouffer's that he grew up with. This recipe is a keeper!!!
