SATE WITH PEANUT SAUCE 
Trim the fat from 2 pounds boneless pork and cut the meat into 1 inch cubes. Mix together 1 1/2 cups orange juice, the juice of 1 lemon, 3 cloves of garlic finely chopped, 3/4 teaspoons sugar, 1 1/2 tablespoons ketchup or soy sauce and salt to taste. Marinate the pork in this mixture for 2-4 hours. Thread the meat on skewers and broil it slowly over a charcoal fire for 15-20 minutes, or until the pork is cooked through and very tender. Serve with the following sauce:

In a saucepan combine 1 teaspoon butter, 2 tablespoons peanut butter, 1 tablespoon ketchup or soy sauce, 1 teaspoon lemon juice and 1 teaspoon sambal oelik or finely crushed dried red pepper. Simmer this mixture over low heat for about 15 minutes, blend in 1/4 cup cream and reheat. Use this sauce as a dip for the sate. Gewurztraminer! Excellent!
