EASY RAISIN BRAN MUFFINS 
1 (15 oz.) box Raisin Bran
1 c. shortening, melted
3 c. sugar
4 eggs
1 qt. buttermilk
5 c. flour (plain)
5 tsp. baking soda
2 tsp. salt
Additional raisins, if desired

Mix bran, sugar, flour, soda, and salt in a large bowl. Add eggs, buttermilk, melted shortening. Mix well and pour into tightly covered container. When ready to use fill greased muffin tins 3/4 full. Bake at 400 degrees for 15 to 20 minutes. This mix will keep in the refrigerator for as long as 3 months in a tightly covered container. If you like a LOT of raisins, add extra, cooked muffins may be frozen, stored in freezer bag. Thaw to room temperature then heat.
