VIDALIA ONION CASSEROLE 
5 lg. Vidalia onions, thinly sliced
1/2 c. butter, softened
25 Ritz crackers, crushed
1/2 c. grated Parmesan cheese

Saute onions with butter in large skillet for 15 to 20 minutes over medium heat. Place half of onions in 9x13x2 inch baking dish. Top with half of crackers and half of Parmesan cheese. Repeat with remaining ingredients. Bake uncovered in 325 degree oven for 30 minutes. Makes 8 to 10 servings.
