SPINACH WHEAT FRITTATA 
2 tbsp. oil
2 c. fresh chopped spinach
1/2 c. chopped onion
2 cloves garlic
1 (8 oz.) can tomato sauce
1 c. wheat germ
1/2 tsp. crumbled marjoram
1/2 tsp. basil
1/2 tsp. pepper
6 eggs
1 c. grated Romano cheese

Saute spinach, onion and garlic until spinach is limp. Remove from heat and stir in wheat germ, marjoram, basil, pepper, eggs and cheese. Transfer to greased pie plate. Cover with tomato sauce and bake at 350 degrees for 35 minutes. Serves 6.
