MEXICAN LASAGNA 
1 1/2 lbs. hamburger (lean)
1 1/2 tsp. cumin
1 tbsp. chili powder
1/4 tsp. red pepper
1 c. grated Jack cheese
1/2 c. grated Cheddar cheese
1/4 c. sliced olives
1 tsp. salt
1 tsp. black pepper
1 (16 oz.) can tomatoes
10 to 12 broken tortillas
2 c. cottage cheese
1 egg

Brown meat and onion and drain. Add spices and tomatoes. Cover bottom of casserole with broken tortillas. Alternate layers of meat, cottage cheese and egg that has been mixed with Jack cheese, Cheddar cheese and olives. Top with tortillas. Bake at 350 degrees for 30 minutes. After baked, sprinkle with grated Cheddar cheese, fresh tomatoes and lettuce.
