SPICED CIDER 
2 1/2 gal. cider
12 oz. brown sugar
10 cinnamon sticks
2 1/2 tbsp. whole cloves
2 1/2 tbsp. allspice
1/2 tsp. mace
1 tsp. salt
f.g. cayenne

Add sugar and spices (tied loosely in a cloth bag) to the cider. Bring slowly to the boiling point. Boil about 15 minutes. Remove spices. Serve hot or chilled.

VARIATION: Cider Punch: Omit spices; substitute 1 quart reconstituted frozen orange juice and 1 quart pineapple juice for an equal amount of cider. Garnish with thin slices of orange. Yield: 2 1/2 gallons.
