CHRISTMAS FRUIT CAKE | |
1/2 lb. butter, Crisco or butter 2 c. sugar 6 eggs, separated 1 qt. grated pineapple 1 c. molasses 1 c. wine 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. allspice 1 tsp. ginger 1/2 tsp. cloves 2 lbs. seeded raisins 2 lbs. seedless raisins 1 lb. dates 1 lb. mixed candied fruit 1 lb. candied cherries 1 lb. walnuts 1 lb. pecans 1 tsp. salt 2 tsp. baking soda 2 tsp. baking powder Mix in order named. Add about 1 1/2 quart of flour. Mix stiff enough for spoon to stand up in it. Grease loaf pans and line with wax paper. Bake about 1 1/2 hours or more in slow oven about 300 degrees. Makes about 5 or 6 loaf cakes. |
