COOL CUCUMBER MOUSSE 
2 env. unflavored gelatin
1 c. cold water
1/4 c. vinegar
2/3 c. mayonnaise
3/4 tsp. salt
1/8 tsp. pepper
2 c. grated cucumber, drained
1 tbsp. grated onion
1 c. sour cream

Soften gelatin in combined water and vinegar. Stir over low heat until dissolved. Cool. Gradually add gelatin to mayonnaise, salt and pepper; mix well. Chill until partially set. Fold in cucumber, sour cream and onion. Pour into oiled 5 cup mold.
