PUMPKIN ROLL 
3 eggs
2/3 c. cooked pumpkin
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 c. sugar
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. chopped nuts (peanut or walnuts)

FILLING:

8 oz. cream cheese
1 c. powdered sugar
4 tbsp. butter
1/2 tsp. vanilla

Mix well the filling ingredients.

Preheat oven to 375 degrees.

Beat eggs at high speed for 5 minutes. Gradually beat in sugar; stir in pumpkin, flour, baking powder and spices. Spread into 15 x 10 x 1 inch greased and floured pan. Top with nuts. Bake for 15 minutes. Turn out on towel. Sprinkle with 10X sugar. Cool; spread top with filling. Roll jelly roll fashion. Chill or freeze. Slice and eat.
