PERFECT PEACH COBBLER | |
4 c. peeled and sliced fresh peaches, apples or nectarines 1 c. sugar 1 tsp. grated lemon peel 1 tbsp. lemon juice 1/4 tsp. almond extract 1 1/2 c. sifted flour 1 tbsp. sugar 3 tsp. baking powder 1/2 tsp. salt 1/3 c. shortening 1 egg 1/2 c. milk Arrange peaches in shallow casserole or baking dish. Mix sugar, lemon peel, juice and almond extract and sprinkle over peaches. Place in oven (400 degrees). Sift together flour, sugar, baking powder and salt. Cut in shortening. Beat egg and combine with milk. Add liquid all at once to flour mixture. Stir just until flour is moistened. Remove peaches from oven. Spoon dough over hot peaches, spreading it lightly with the back of a spoon. Sprinkle with 2 tablespoons sugar. Bake in hot oven (400 degrees) for 30 minutes, or until top is golden brown. Serve warm with a pitcher of cream. |
