Vegetable oil 1 lb. fish fillets, cut into 2 x 1 1/2 inches 2/3 c. flour 1/2 tsp. salt 1/2 tsp. baking soda 1 tbsp. vinegar 2/3 c. water Heat oil (2-3 inches) in deep fat fryer to 375 degrees. Pat fish dry. Mix flour and salt. Mix vinegar and soda and add water. Add to flour mixture. Beat until smooth. Dip fish into batter. Drip excess into bowl. Fry 4-5 pieces until brown, turning once, about 3 minutes. Drain. |
