BEANS AND RICE BAKE 
2 tbsp. shortening
1 1/2 c. chopped onion
1/4 c. green chilies
2 cans Ranch style beans
1 c. cooked whole rice (cooked)
1 c. creamed cottage cheese
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. chili powder
1/4 c. Cheddar cheese, shredded
2 cloves garlic, minced

Preheat oven to 350 degrees. Saute onion and garlic in shortening until tender. Add chilies. Combine beans, rice and cottage cheese. Fold in onion, peppers, salt, pepper and chili powder.

Spoon into lightly greased 2 quart casserole. Bake at 350 degrees for 35 minutes. Top with cheese.
