GERMAN POTATO SOUP | |
4 med. or 2 lg. potatoes 1 med. onion, chopped 2 hard cooked eggs 2 tbsp. butter 1 tbsp. flour 3 c. water Salt and pepper to taste 1/2 tsp. celery salt 1/2 tsp. parsley flakes Hard cook two eggs and set aside. Pare and dice potatoes, cover with cold water and set aside. Melt butter in pan, add chopped onion and saute until lightly browned. Add flour and stir until light brown. Set aside. Pour first water off potatoes, add three cups fresh water and cook until just done, but not mushy. Add small amount of potato liquid to onion-flour mixture and blend. Slowly add to potatoes, stirring gently until well blended. Heat until mixture thickens slightly, add eggs and seasonings. Makes 4 servings. |
