FRUIT TOP CAKE 
1/2 c. butter or pareve butter
1 c. sugar
3 eggs
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
Pinch of salt

Peeled, sliced fresh fruit: apples, peaches and apricots. Cream together first 4 ingredients. Sift together flour, baking powder and salt. Mix together. Batter will be very stiff.

Pour into 8 inch square pan, greased and floured. Place fruit of choice on top. Bake 50 minutes in 350 degree oven.
