CLASSIC CHEESECAKE 
3 (8 oz.) cream cheese
1 c. sugar
1 tsp. vanilla
4 eggs
1/2 c. whipping cream
2 tbsp. lemon juice

Preheat oven to 350 degrees - cover outside of springform pan with tin foil. Beat cream cheese until smooth, gradually add sugar. Reduce speed, beat in lemon juice and vanilla. Add eggs one at a time. Blend well. Add cream, beat until smooth. Pour batter into pan, put springform pan in large pan and fill with water to cover 1 inch of the bottom of the pan. Bake 1 1/4 hours or until center is set. Let cool in oven 1 hour with door open.
