STRAWBERRY MOUSSE | |
2 lbs. strawberries 2 c. whipping cream Kirsch (cherry liqueur) 4 tbsp. sugar 2 tbsp. lemon juice Set aside a few whole strawberries as garnish for mousse. Blend strawberries to pulp; add about 2 tablespoons lemon juice; add kirsch to taste; add approximately 3 to 4 tablespoons sugar; add more kirsch if necessary. (Vary this mixture to your own taste.) Set aside. Whip cream until stiff. Set aside a small amount of strawberry mixture for garnish. Fold strawberry mixture into whipped cream. Chill. Spoon into dessert dishes. Pour a little of the set aside strawberry mixture on top of each dish and garnish with a strawberry. Serves 8 to 10. (You can vary liqueur, sugar and lemon juice to taste, measurements are approximately.) This mousse tastes like light strawberry clouds. |
