CRUNCHY LEMON FISH 
15 Ritz crackers (rolled fine)
2 tbsp. butter
10 to 12 oz. frozen fish
1 tbsp. lemon juice
2 tbsp. parsley, cut up fine

Melt the butter and mix with the crackers. Butter a baking pan and lay the fish in it. Sprinkle the lemon juice on the fish and spread with the cracker mixture. Bake 20 to 25 minutes at 400 to 425 degrees. The fish should flake easily when it is done. Sprinkle with the parsley just before serving.
