BANANA LAYER CAKE | |
2 c. sifted cake flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1/2 c. shortening 1 egg and 1 egg yolk (well beaten) 1 c. mashed ripe bananas 3/4 c. sour milk or buttermilk 1 tsp. vanilla 1 1/2 c. white sugar Sift flour once, measure, add baking powder, soda and salt. Sift together 3 times. Cream shortening thoroughly. Add sugar gradually and cream together until light and fluffy. Add eggs and beat well. Add bananas and beat again. Add flour to creamed mixture, alternately with milk beating after each addition until smooth. Add vanilla. Bake in either 9x13 loaf pan or layer pans at 350 degrees until cake springs back when touched (approximately 30-35 minutes). |
