QUICK BEEF AND BROCCOLI 
1 lb. thin slices beef
1/4 c. soy sauce
1 tbsp. dry sherry
1 tbsp. cornstarch
1 tsp. sugar
2 stalks broccoli
3 tbsp. vegetable, oil, divided
1 sm. onion, cut into strips
1/2 c. sliced fresh mushrooms
Hot cooked rice

Combine soy sauce, dry sherry, cornstarch and sugar. Pour over beef and set aside. Cut flowerets from broccoli, cut stalks into thin slices. Pour 2 tablespoons oil into wok or large skillet, coating bottom and sides, heat to 325 degrees. Add broccoli and onion, stir fry 2 minutes. Remove from wok.

Pour remaining oil into wok, coating sides. Add steak; stir fry 2 minutes. Add mushrooms; stir fry 2 minutes. Stir in broccoli mixture. Serve over hot rice. Yield: 4 servings.
