8 lbs. pickling cucumbers Pickling lime 1/2 gal vinegar 5 lbs. sugar (less 1 cup) 1 tbsp. salt 2 tbsp. pickling spice Caning jars with lids Cheese cloth Wash and slice cucumbers. Let soak in 2 gallons of water with 2 cups pickling lime for 24 hours. Stir once in a while. Rinse cucumbers 2 or 3 times to get lime off. Mix vinegar, sugar and salt in large pan. Tie up pickling spice in piece of cheese cloth and let float in vinegar mixture. Add cucumbers and boil for 45 minutes. Pickles will be clear looking. Pack pickles well into jars and add liquid to the top. Put on lid and turn upside down to seal. |
