STUFFED MUSHROOMS 
1 pkg. mushrooms, cleaned, stems removed and diced
1 med. onion
1/2 c. Cheese-Its, finely grated
1 stick butter
1/4 c. water
1/2 to 1 c. Ritz crackers, grated
1 c. cheddar or Velveeta cheese, cubed

Melt butter and cook onion and mushroom stems. Add crackers and Cheese-Its and water. Stir quickly so mixture does not stick to skillet. If more water needed, use as little as necessary. Stir until cheese is soft and mixed well with other ingredients.

Stuff mushrooms and place in foil-covered baking pan in 350 degree oven for 20-30 minutes.
