POTATO CANDY 
2 med. potatoes
1/2 tsp. vanilla
2 (1 lb.) boxes powdered sugar
Peanut butter

Cook 2 medium potatoes with skins until done. Then peel potatoes; put potatoes in bowl and mash with fork. Add 1/2 teaspoon vanilla and 2 (1 pound) boxes powdered sugar. After mashing potatoes, put vanilla in; start adding powdered sugar, continue stirring in sugar until mixture makes like a dough. Sprinkle some sugar on table and roll out thin. Spread peanut butter over dough. Take knife and roll up like jelly roll, then slice in 1/4 inch pieces.
