FRESH COCONUT CAKE - FILLING 
1 lg. fresh coconut, grated
2 c. sugar
2 tbsp. cornstarch
1/8 tsp. salt
1 c. coconut milk (add enough milk to coconut milk to make 1 c.)

Reserve 3/4 cup of grated coconut, more if you want more on the top of cake. Mix remainder of coconut with above ingredients. Cook over moderate heat, stirring until thickened. Cool slightly. Spoon between cake layers. Topping each with a little of the reserved coconut.
