SPICED PEACH JELLY 
4 lbs. peaches (8 c.)
1 c. water
1 pkg. Sure Jell
5 c. sugar
1/2 tsp. ground cinnamon
1/8 tsp. ground mace
1/4 tsp. almond extract

Mash peaches, add water and bring to boiling. Reduce heat, cover and simmer 10 minutes. Strain through cheesecloth. Don't squeeze. Measure juice and add enough water to make 3 1/2 cups juice. Bring juice and Sure Jell to full rolling boil. Stir in sugar and spices. Return to full rolling boil. Boil hard for 1 minute. Remove from heat. Makes 5 half pints.
