STUFFING FOR CHICKEN 
3 c. self rising cornmeal
3 c. milk
3 tbsp. bacon drippings

Mix well and cook in a 9" iron frying pan until brown. (Cook ahead of time.) Take 5 cups of chicken stock, 2 cups of chopped spring onions with tops. Mix all these ingredients with the cornbread. Stuff hen with the mixture adding more stock if needed to make soft mixture. Place the rest of the stuffing around the chicken and brown in the oven.
