WHOLE WHEAT BREAD 
Makes 4 loaves

1 pt. milk
1 stick butter (1/2 c.)
3 tsp. salt
1/3 c. molasses
1/2 c. brown sugar
3 pkgs. yeast
4 c. whole wheat flour
4 c. white flour
1 c. soy flour
1 c. wheat germ

Scald 2 pints milk; while still warm, add 1 stick butter, 3 teaspoons salt, 1/3 cup molasses, 1/2 cup brown sugar. Cool to warm. Add 3 packages yeast dissolved in 1/2 cup warm water.

Add 4 cups whole wheat flour, 4 cups white flour, 1 cup soy flour and 1 cup wheat germ. Knead 10 minutes until it feels right, adding up to 1 to 2 cups additional white flour as needed to achieve a smooth, non-sticky dough. Let rise 2 hours or more. Divide dough into 4 parts. Place in bread pans. Bake 30 to 40 minutes at 325 degrees.
