SPAIN'S SASSY CHICKEN 
6 chicken cutlets
1 lg. onion
1 lg. green bell pepper, chopped
6 med. white potatoes, boiled, peeled & sliced
2 c. tomato sauce (recipe given below)
2 pkgs. Sazson
3 garlic cloves, chopped fine
1 c. Mozzarella cheese, grated

Prepare Sauce: To 2 cups tomato paste add water to make 2 cups if needed. Add chopped garlic and sazson. Simmer 1/2 hour. Stir once in a while; set aside.

Saute cutlets until light brown both sides. Remove from pan; set aside. Saute onion and pepper. Remove from pan and set aside. Put potatoes in pan, stir a few seconds. Add meat and sauteed onion and pepper. Pour in sauce, stir once. Cover and simmer slowly 20 minutes. Watch carefully, add a little water as needed to prevent drying. Remove cover, add the cheese on top. Cover and heat 5 minutes.
