CHICKEN IN CREAM MUSTARD SAUCE 
1 tsp. butter
1 tsp. oil
4 chicken cutlets
1/2 c. plain low fat yogurt
2 tbsp. Dijon mustard

Cook chicken in butter/oil for 5 minutes on each side. Remove and keep warm. (Make sure they are cooked through.) Add yogurt to pan and stir up any brown bits for flavor. Add mustard. Add chicken and heat together to mingle flavors.

Serves 4.
