PUMPKIN ROLL 
3 eggs
1 c. sugar
1 tbsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
3 tsp. pumpkin spice
1/2 tsp. salt
1 can pumpkin
1/2 c. pecans, crushed

Beat first 3 ingredients well until creamy. Blend remaining ingredients with first mixture.

Bake at 350°F for 15 minutes. Don't overbake. Let cool completely.

Fillings:

1 c. confectioners sugar
4 tbsp. butter
1 tsp. vanilla
1 pkg. cream cheese

Spread confectioners sugar on dish towel. When cooked pumpkin mixture is cool, roll it in this dish towel for 15 to 20 minutes. Gently unroll and spread filling. Gently reroll. Place roll on serving platter with flap on bottom.
