POTATO LATKES WITH APPLE TOPPING 
3 eggs
2 tbsp. flour
1 tbsp. finely grated onion
Salad oil
2 c. finely shredded, pared potatoes
1 tsp. salt

Beat together eggs, flour and salt. Add potatoes and onion. Mix well. In a large skillet, heat 1/4 inch of oil. Drop 1/4 cup mixture into hot oil and fry until golden brown on both sides. Drain on paper towels. Serve hot with topping (recipe follows).

APPLE TOPPING:

1/4 c. butter
2 tbsp. water
Dash of cinnamon
3 tbsp. honey
1/2 tsp. lemon juice
1 lg. golden delicious apple

Melt butter in large skillet. Add honey, water, lemon juice and cinnamon. Blend pared and thinly sliced apple. Cover, cook for 5 minutes. Serve hot. You may want to double this sauce.
