RATATOUILLE 
1 med. onion, chopped
1 eggplant, peeled and cubed
1 clove garlic, minced
1 green pepper, diced
2 c. canned, chopped tomatoes
2 zucchini, sliced
2 tbsp. olive oil
1 tbsp. parsley flakes
1 tsp. basil
1 tsp. salt

Saute onion and garlic in oil. Add zucchini, eggplant, and green pepper. Saute about 10 minutes (add more oil if needed). Stir in tomatoes and seasonings. Simmer 10 minutes. Serve over rice.
