STUFFED BAKED YAMS 
4 med. yams
3/4 c. shredded cheddar cheese
1/4 c. milk
2 1/2 tbsp. melted butter
3/4 tsp. vegetable seasoning
Paprika

Bake yams at 400 degrees for 15 minutes. Lower temperature to 375 degrees and bake 45 minutes or until tender. Cut lengthwise and scoop out center leaving some in the shell. Beat the yam center with 1/2 cup cheese, milk, butter and seasoning. Fill shells with the mixture and top with remaining cheese. Sprinkle with paprika. Place under broiler until lightly browned and cheese is melted. Yield 4 servings.
