SPICY THAI PEANUT DIP 
1/2 c. creamy peanut butter (all natural)
1/4 c. vegetable broth
2 tbsp. soy sauce
1 tbsp. red wine vinegar
1/2 tsp. crushed red pepper
1 scallion, chopped

In bowl, whisk peanut butter, vegetable broth and soy sauce until smooth. Stir in remaining ingredients.

Makes 1 1/2 cups.
