CHINESE PORK CHOPS 
6 (3/4" thick) pork chops
Flour
1 tbsp. bacon fat
2/3 c. soy sauce
2/3 c. vinegar
1/3 c. sugar
1/2 tsp. ginger
2/3 c. water

Dredge chops in flour, brown in hot fat in heavy skillet. Pour off fat. Add remaining ingredients, bring to a boil, cover and simmer 1 hour.
