PUMPKIN POUND CAKE | |
1 c. brown sugar 1 1/4 c. granulated sugar 1 1/4 c. shortening 4 eggs 2 c. cooked pumpkin 3 c. sifted flour 1 tbsp. salt 2 tsp. baking soda 3 1/2 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. allspice 1/2 tsp. ginger 1/2 c. chopped pecans 1. In large mixing bowl, combine sugars, shortening and eggs; beat 2 minutes on medium speed of electric mixer; add pumpkin. 2. Sift together flour, salt, soda, and spices; gradually blend into creamed mixture. Beat 2 minutes at high speed. Stir in nuts. 3. Pour into greased and floured 10 inch tube pan. 4. Bake at 350 degrees for 60-65 minutes. Cool 15 minutes; remove from pan. 5. Frost with cream cheese frosting. |
