COFFEE BREAD 
1 c. instant mashed potatoes
1 c. boiling water

Mix well. 1/2 c. sugar 1/2 c. oil 2 tsp. salt 2 or 3 eggs (beaten) 2 pkgs. dry yeast dissolved in 1/2 c. warm water Flour (5 1/2 c. or more to make stiff dough) Cardamom Raisins

Mix potatoes, milk, sugar, oil, salt and eggs. Add yeast. Then flour to make stiff dough. Knead well with elastic.

Put in large greased bowl and let raise until at least double in bulk. Knead well again.

Make into braids. Let rise in pan until double in bulk. Bake 350 degrees 20 minutes or until well browned.

For 1/2 recipe I use 2 eggs and 2 yeast cakes.

This recipe can be used for dinner rolls and cinnamon rolls also.
