CHICKEN CORDON BLEU 
2 lg. chicken breasts
4 thin slices fully cooked or baked ham
4 thin slices Swiss cheese
1/2 c. all-purpose flour
1/2 c. bread or cracker crumbs
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
1/2 c. vegetable oil
2 eggs, slightly beaten
1/4 c. milk

Remove bones and skin from chicken breasts. Cut chicken breasts in half. Place chicken between 2 pieces of plastic wrap. Beat with a mallet on both sides of each breast. (This helps make the chicken more tender).

Place 1 slice of cheese, then ham on top of each piece of chicken. Roll up carefully, beginning at narrow end. Secure with toothpicks.

Mix flour, crumbs, salt, pepper, and paprika in a bowl. Beat eggs and add the milk. Dip chicken rolls into egg mix, roll in flour and crumb mix. Repeat.

Heat oil in skillet over medium heat. Cook the rolls in oil until golden brown, turning occasionally.

Place browned rolled in a greased baking dish, cover and bake in a 350 degree oven for 30 to 45 minutes or until fork tender. Remove toothpicks before serving. Serves 4.
