POTATO LEFSE 
(Use russet potatoes, they are dry.)

Boil a pan of potatoes. Mash them well until there are no lumps. A mixer works well. Mix together until smooth: 1 c. flour 1/2 tsp. salt 1 tbsp. vegetable oil 1 tbsp. cream 1 tsp. sugar

Take a teaspoonful of dough and roll into a ball. Put flour on table and roll flat and thin. Roll as thin as possible with the least amount of flour you can use. Fry on hot, dry grill (500 degrees) on each side. Eat with butter, jelly, sugar or whatever you like. Makes approximately 12 small ones. Use lefse pin if you have one.
