QUICK IRISH STEW 
2 lbs. ground beef
6 onions
2 (#2) cans peas & carrots
12 med. potatoes
Shortening
Salt and pepper

Peel and dice potatoes. Put in pot over fire in water to cover. Add 1 teaspoon salt. Boil for about 45 minutes. Peel onions and slice THIN. Melt 2 tablespoons shortening in pan and brown onions. Add meat and cook. When potatoes are done, drain off water. Mix meat, onions, carrots, peas, and potatoes. Hang pot over slow fire until everything is heated, stirring often. Season with salt and pepper
