GERMAN STYLE RED CABBAGE 
16 c. shredded red cabbage
2 c. boiling chicken broth
1/4 c. unsalted butter
2 apples (McIntosh), peeled, cored and chopped
2 tbsp. red wine vinegar
1/2 tsp. salt
1 (1/2 inch) piece cinnamon stick
1/3 c. red wine
2 whole cloves
1 tbsp. brown sugar
Dash of pepper

Combine cabbage, broth and butter in large kettle and cook covered over medium heat for one hour. Add apples, vinegar, sugar and seasonings. Cook covered 30 minutes, stirring occasionally. Add wine and cook another 10 minutes. Serves 8.
