BLUEBERRY POUND CAKE 
2/3 c. shortening
2 c. sifted cake flour
1 1/4 c. sugar
1/2 tsp. cream of tartar
1 tsp. salt
1/4 tsp. baking soda
1/2 c. water
1 tsp. vanilla
3 eggs
Confectioners' sugar
2 c. blueberries

Preheat oven to 350 degrees. Cream shortening. Stir in flour, sugar, salt, cream of tartar, baking soda, water and vanilla. Beat for 2 minutes. Add eggs and beat for 1 minute more. Add blueberries and mix carefully with a spoon.

Pour into a well greased and floured loaf pan and bake at 350 degrees for about 1 hour. Cool in pan for 10 minutes and turn onto a wire rack. When cold, sift confectioners' sugar on top.
