EASY COD AND BROCCOLI SKILLET | |
1 pkg. (10 oz.) frozen chopped broccoli 1 can (10 3/4 oz.) condensed cream of mushroom soup 2 tbsp. Vermouth or other white wine 1 tsp. lemon juice 1 pkg. (12 oz.) Gorton's Fishmarket Fresh frozen cod fillets 2 tbsp. pimientos, chopped 1/2 tsp. salt Dash of pepper Chow mein noodles Rinse frozen broccoli under running cold water to separate; drain. Mix soup, wine, and lemon juice in 10 inch skillet. Heat to boiling, stirring constantly. Add broccoli, frozen fillets, pimientos, salt and pepper. Cover and simmer until fillets flake easily with fork, about 15 minutes. Serve over noodles. 4 servings. Microwave directions: Arrange frozen fillets with thickest parts to outside edges of rectangular microwavable dish, 12 x 7 1/2 x 2 inches. Rinse frozen broccoli under running cold water to separate; drain. Mix broccoli, soup, wine, lemon juice, pimientos, salt and pepper. Pour over fillets. Cover with vented plastic wrap and microwave on high (100%) 6 minutes; rotate dish 1/2 turn. Microwave until fillets flake easily with fork, 6 to 8 minutes longer. |
