WATERMELON PICKLES 
8 lb. watermelon rind
1 qt. vinegar
3 lb. sugar
6 cinnamon sticks, broken
2 tsp. whole cloves

Remove outer skin from rind, cut into 1 inch cubes. Boil until tender; drain. Boil together vinegar and sugar and a spice bag containing the spices. After mixture has boiled, add rind. Simmer slowly until rind is clear.

Pack in clean hot glass jars; fill to overflowing with syrup and seal. Makes about 4 quart jars.
