CHEESE TOPPED SPINACH 
1 (6 oz.) jar marinated artichokes, drained
2 (12 or 10 oz.) pkgs. frozen spinach, thawed or lightly steamed fresh or mixture
1 (8 oz.) pkg. cream cheese, softened
2 tbsp. butter
4 tbsp. milk
1/2 c. grated Parmesan cheese

Place artichokes in greased 1 quart baking dish. Drain spinach and spread over artichokes. Blend cheese with butter then mix in milk. Spread cheese mixture over spinach. Season with salt and pepper. Sprinkle top with Parmesan cheese. Cover and bake at 350 degrees for 30 minutes. Remove cover and bake 10 minutes longer. Makes 6 to 8 servings.

After adding Parmesan, I sprinkle chopped green onions and layer Monterey Jack and cheddar cheese on top of onions. Sprinkle with more onions and then top with Parmesan cheese.
