NORTH CAROLINA APPLE LANE CAKE 
1 c. butter
1 tsp. vanilla
1/2 tsp. cinnamon
1 1/2 c. sugar
2 1/2 c. flour, unsifted
2 tsp. baking powder
1/4 tsp. salt
2/3 c. milk
8 egg whites
1/2 c. apples, shredded

Cream first 3 ingredients. Mix flour, baking powder and salt. Blend alternately with milk. Beat egg whites until stiff but not dry. Stir a little egg white into batter, stir in shredded apple. Fold egg whites into remaining batter. Pour into 3 greased and floured 9 inch pans. Bake at 350 degrees for 20 to 25 minutes. Cool in pans for 10 minutes. When cool, spread filling between layers and frost with a white frosting or cream cheese frosting.

NORTH CAROLINA APPLE LANE CAKE FILLING:

8 egg yolks
1 c. sugar
1/4 tsp. salt
1/2 c. bourbon
1/2 c. butter, melted & cooled
1 tsp. vanilla
1 c. pecans, chopped
2 c. apples, chopped

Beat egg yolks, sugar and salt until light and thick. Gradually beat in bourbon, then butter. Pour into top of double boiler, cook, stirring constantly over simmering water until thickened, about 10 minutes. Remove from heat. Stir in vanilla, pecans and apples. Fill between layers of cake.

I have been making this cake for over 40 years. I put a divinity frosting around the sides. Let it sit over night. Wow... What a taste! If you cut right away.. You taste too much bourbon. The longer it sits, the better. It won't last long enough to go bad....
