DIABETIC PUMPKIN COOKIES 
1 c. shortening
1 c. cooked pumpkin
1 egg
1 tsp. vanilla
2 c. flour
1/4 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 c. raisins
1/2 c. chopped nuts

Soak raisins hot water for 5 minutes, then drain. Cream shortening. Add pumpkin, egg and vanilla. Beat well. Mix dry ingredients and add to creamed mixture. Mix well. Add raisins and nuts. Drop on greased cookie sheet. Bake 350 degrees for 12 minutes. Makes 48 cookies.
